Paleo Cashew Butter Spice Cookies

This paleo cashew butter spice cookie is a delightful hostess gift during the festive season. The scrumptious chewy cookie is gluten-free, paleo, grain-free and dairy-free making this cookie acceptable for most restricted diets. For me, I love this high protein cookie before my workout for lasting energy! The best part is, this easy to make recipe takes only minutes to prepare and 15 minutes to bake

Ingredients

  • 1 cup raw cashew butter, at room temperature
  • ¾ cup coconut sugar plus 1 Tbsp. for sprinkling
  • 2 eggs, at room temperature
  • 1 ½ tsp. pure vanilla extract
  • 2 tsp. GF ground cinnamon
  • ½ tsp. GF ground turmeric
  • ½ tsp. GF ground nutmeg
  • ¾ cup chopped nuts (walnut, pecans or almonds)
  • ¾ cup shredded unsweetened coconut
  • Instructions

  • Preheat oven to 350 F and line a baking sheet with parchment paper
  • In a medium-size bowl using a spatula, cream together cashew butter and coconut sugar
  • Add eggs, vanilla, cinnamon, turmeric and nutmeg and mix well. Stir in nuts and coconut
  • Scoop a tablespoon of dough for each cookie and place on prepared baking sheet, should make 24. Dip a fork in water and slightly flatten the tops. Sprinkle each cookie with coconut sugar
  • Bake for 15 minutes. Cool on the baking sheet
