Ingredients

  • 1 Tbsp. ground flax seed
  • 1 ½ cups pumpkin seeds
  • ¼ cup coconut flour
  • 2 tsp. ground ginger or 1 Tbsp. fresh minced ginger
  • ½ tsp. of each, cinnamon, nutmeg and cloves
  • ½ tsp. baking soda
  • ¼ tsp. sea salt
  • 4 Tbsp. melted coconut oil
  • 1/3 cup pure maple syrup
  • ½ tsp. pure vanilla extract
  • 1 Tbsp. coconut sugar for sprinkling (optional)
  • Instructions

  • Preheat oven to 350 F and line a baking sheet with parchment paper
  • Mix ground flax seed and 3 tablespoons of water in a medium bowl. Set aside for 15 minutes
  • Process sunflower seeds in a food processor into coarse flour. Add balance of dry ingredients and pulse until combined
  • Add coconut oil, maple syrup and vanilla into flax seed mixture and mix
  • Transfer dry ingredients into a large bow and add flax seed mixture. Mix well to combine and rest for 10 minutes, allowing coconut flour to absorb the liquids
  • Using a tablespoon scoop batter onto prepared baking sheet. Using a fork press dough to flatten slightly. Dip fork into water to avoid sticking. Sprinkle with coconut sugar if so desired
  • Bake for 12 – 15 minutes or until golden brown. Cool on the baking sheet
