Gluten Free Grain Free Gingerbread Cookies

I created this healthy gingerbread cookie to accommodate most diets. It is grain free, paleo, dairy free, egg free and nut free. This cookie is the powerhouse of cookies. Although I have named it a cookie, it should be labeled healthy energy snack. This scrumptious cookie is made with pumpkin seeds. Pumpkin seeds are well known for their health benefits such as omega-3 and omega-6 fatty acids, fiber, zinc and protein

Include this healthy chewy gingerbread cookie in your children’s lunch box or enjoy as energy snack. Next time you crave sweets indulge in our healthy gluten free gingerbread cookie without the guilt


1 Tbsp. ground flax seed
1 ½ cups pumpkin seeds
¼ cup coconut flour
2 tsp. ground ginger or 1 Tbsp. fresh minced ginger
½ tsp. of each, cinnamon, nutmeg and cloves
½ tsp. baking soda
¼ tsp. sea salt
4 Tbsp. melted coconut oil
1/3 cup pure maple syrup
½ tsp. pure vanilla extract
1 Tbsp. coconut sugar for sprinkling (optional)


Preheat oven to 350 F and line a baking sheet with parchment paper
Mix ground flax seed and 3 tablespoons of water in a medium bowl. Set aside for 15 minutes
Process sunflower seeds in a food processor into coarse flour. Add balance of dry ingredients and pulse until combined
Add coconut oil, maple syrup and vanilla into flax seed mixture and mix
Transfer dry ingredients into a large bow and add flax seed mixture. Mix well to combine and rest for 10 minutes, allowing coconut flour to absorb the liquids
Using a tablespoon scoop batter onto prepared baking sheet. Using a fork press dough to flatten slightly. Dip fork into water to avoid sticking. Sprinkle with coconut sugar if so desired
Bake for 12 – 15 minutes or until golden brown. Cool on the baking sheet
