STEP ONE
Buttermilk: the chicken is coated in buttermilk mixture made with buttermilk, gluten free flour and baking soda.
STEP TWO
Bread crumbs: dip the chicken covered with buttermilk into seasoned bread crumbs (no eggs)

Preheat oven to 400 F

Generously season chicken pieces with salt and set aside for 15 minutes

Meanwhile, mix buttermilk, gluten free flour, and baking soda. The mixture will become a thick paste

Add bread crumbs, seasoning, and olive oil in a large bowl. Using your hands, evenly combine the bread crumbs with seasoning and the oil

Dip each chicken into the flour mixture to coat evenly. Shake some of the mixture off and dip into the bread crumbs to coat evenly. Using your hands, firmly press the bread crumbs onto the chicken

Place the chicken pieces onto a large baking sheet lined with parchment paper and bake for 30 - 35 minutes, or until golden and crispy and the chicken is cooked
