Ingredients

SHORTCRUST PASTRY
1 tsp. xanthan gum (this is in addition to the one in the blend)
3/4 tsp. sea salt
1 large egg
1/2 cup (1 stick) cold unsalted butter
Cold water as needed
MEAT FILLING
1 1/2 cups (1 large russet potato), mashed potatoes (you can use leftover mashed potatoes)
1 Tbsp. extra virgin olive oil
1 lb. ground pork
1/2 lb. lean ground beef
1 large shallot, finely chopped
2 Tbsp. Chopped fresh sage or 1/2 tsp. GF ground sage
1/2 tsp. GF ground black pepper
1/8 tsp. GF ground cinnamon
1/8 tsp. GF ground cloves
1 tsp. sea salt
egg wash *see notes on egg wash in the blog
*you can use a small onion to replace the shallot. However, then you will need to add 1 minced garlic clove

Ingredients

1 1/4 cups dairy-free milk
1/3 cup extra virgin olive oil
1/2 cup pure maple syrup
1 Tbsp. fresh lemon juice
1 tsp. Psyllium husk powder (this replaces eggs, see substitution on the blog). I used this brand
1 large ripe pear (about 1 cup), skin on, grated
1 tsp. GF ground cinnamon
1/4 tsp. GF ground nutmeg
3/4 tsp. Sea salt
1 1/2 cups all-purpose gluten free flour blend. I used this blend
1 1/2 cups GF blanched almond flour. I used this flour
1 1/2 tsp. GF baking powder
1 1/2 tsp. baking soda
2 carrots (about 1 1/2 cups), grated
1/2 cup raisins
