Creamy One-Skillet Gluten-Free Pesto Chicken and Orzo Bake

Ingredients
4 boneless skinless chicken breasts or 6 thighs, (about 1 1/2 lb), cut into strips
3 tablespoons extra virgin olive oil or butter
3 teaspoons GF Italian seasoning, divided
1 medium yellow onion, finely chopped
4 cloves garlic, finely chopped
1 tsp GF dried thyme or 1 tbsp fresh thyme
1 cup dry gluten-free orzo pasta
2 teaspoons GF chili flakes (optional)
2 cups water or GF chicken broth
3 cups roughly chopped kale
1 cup heavy cream
1/3 cup basil pesto
1 1/2 cups shredded mozzarella cheese, divided
Sea salt and GF black pepper to taste

Instructions
- Preheat the oven to 400°F.
- Season the chicken with salt, pepper, and 1 teaspoon of Italian seasoning. In a large, oven-safe skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned on all sides. Reduce the heat to low, then add the chopped onions, garlic, and thyme. Cook for about 3 minutes, until the onions begin to soften.
- Add the orzo, remaining Italian seasoning, and chili flakes (if using) to the skillet, stirring to combine.
- Pour in the water, add the chopped kale and season with salt. Bring the mixture to a boil, then cook for 3-5 minutes, allowing the kale to soften and the orzo to absorb some of the liquid.
- Stir in the cream, pesto, and 1/2 cup of mozzarella. Bring the mixture to a simmer. Sprinkle with the remaining shredded mozzarella, then transfer the skillet to the oven. Bake uncovered for about 15 minutes, or until the sauce is bubbling and the cheese is golden and melted. Let the dish rest for 10 minutes before serving. This allows the sauce to thicken to perfection.
