Immune Boosting Soup with Nori

Ingredients
1 Tbsp. extra virgin olive oil
1 Tbsp. GF dried basil
1 Tbsp. GF turmeric powder
½ tsp. GF cayenne pepper
1 organic yellow onion, thinly sliced
2 garlic cloves, chopped
½ organic red bell pepper, thinly sliced
4 cups thinly sliced organic green cabbage
¼ lb. sliced mushrooms
4 cups of organic gluten-free vegetable or chicken broth + 1 cup water
2 Tbsp. minced ginger (about 2-inches)
Juice of one lime
2 sheets of nori (roasted seaweed). Using scissors cut into 2- inch wide strips
Instructions
- Heat oil over medium-low heat in a large soup pot. Add basil, turmeric, cayenne pepper, onion and garlic and stir to combine
- Add bell peppers, cabbage and mushrooms and cook for one more minute while stirring
- Add stock, water and ginger and bring to boil. Remove from the heat and add lime juice and nori. Cover and rest for 5 minutes, enjoy!
