This healthy and flavourful soup is made with nori, vegetables, spices, ginger and fresh lime juice. The veggies are briefly cooked in a tasty broth and finished with nutrient-packed nori. This immune-boosting soup is packed with fiber and is low in calories.

What is nori?

Nori is a seaweed made with edible red algae. This algae is a marine plant that grows on the rocks in shallow sea water. Nori is made by shredding edible seaweed and pressed into thin sheets. Then the sheets are dried.

The nori is a powerhouse of nutrients. The key vitamins are A, B, C, D, E and K, as well as niacin and folic acid. Nori is also rich in calcium and iron.

How to make immune-boosting soup with nori?

What is so remarkable about this healthy soup is that it takes just minutes to cook. The thinly sliced veggies are tender and firm to bite. The broth is flavourful and satisfying.

To make this healthy soup start with spices and garlic, briefly heated in olive oil. Then stir in the veggies to coat them with garlic and spices.

For the finish, add chicken or vegetable broth with fresh ginger, and bring to a boil. Remove from the heat and stir in nori and fresh lime juice. Set aside for five minutes, then enjoy!

Uses for nori

Nori is well known for being used for sushi. However, this nutrient-packed seaweed can be used in smoothies, replacing lettuce for lettuce wraps, used as a seasoning in rice or as a garnish in various dishes.

Nori can also be used as a snack. Simply season with spices and a drizzle of olive oil, and enjoy.
