Gluten-Free Pumpkin Creamy Chicken Pasta Bake

Ingredients
10 oz gluten-free short-cut pasta
2 large chicken breasts (about 1 lb), cut into bite-sized pieces, roughly 1 to 1½ inches
1 tsp GF paprika
4 tbsp extra-virgin olive oil, divided
1 medium onion, finely diced
½ tsp GF dried thyme
½ tsp GF dried sage
¼ tsp GF ground nutmeg
3 garlic cloves, freshly minced or grated
2 tbsp pure tomato paste
1 can (15 oz) pure pumpkin puree
1 cup GF chicken broth
8 oz cream cheese
½ cup shredded sharp white cheddar
¾ cup gluten-free breadcrumbs
Sea salt and GF ground black pepper, to taste
Instructions
- Cook the pasta and chicken: Preheat oven to 375°F (190°C). Cook pasta in salted water until just shy of al dente—firm, undercooked in the center; it'll finish in the oven. Reserve 1 cup pasta water, then drain.
- While pasta cooks, season chicken with paprika, salt, and pepper. Heat 3 tbsp olive oil in a large oven-safe skillet over medium-high heat. Sear until browned and almost cooked through; remove and set aside.
- Make the pumpkin sauce: In the same skillet, cook onion 4–5 minutes until softened. Add garlic, tomato paste, thyme, sage, and nutmeg; cook 1 minute until fragrant. Pour in the reserved pasta water and chicken broth, scraping up browned bits. Stir in pumpkin puree; simmer 2–3 minutes. The sauce should look loose, the undercooked pasta will absorb it in the oven.
- Make it creamy: Off heat, stir in cream cheese until smooth. Season with salt and pepper to taste.
- Combine and top: Return pasta and chicken to the skillet; gently stir to coat. Top with cheddar, then with breadcrumbs mixed with 1 tbsp olive oil, salt, and pepper.
- Bake: Bake uncovered 10–15 minutes, until bubbling and heated through. Broil 1–2 minutes for extra crunch, watching closely. Rest 10 minutes before serving.
