Tropical quinoa power salad packs lot of flavours. Quinoa is naturally gluten free seed, high in fiber, iron, potassium, contains all nine essential amino acids, B-vitamins and is also high in protein. Ingredients

  • 2 cups cooked quinoa
  • 1 large tomato, cut into bite size pieces
  • 1 large orange, peel and cut into bite size pieces
  • 1 pomegranate, deseed (if unavailable use grapes)
  • 1 cup diced cucumber
  • 1 cup dried currants or raisins
  • ½ cup diced green onions
  • 1 13 oz. can garbanzo beans, drain and rinse
  • ¼ cup chopped parsley
  • Handful of fresh mint leaves
  • ¼ cup fresh orange juice
  • 2 Tbsp. raw apple cider vinegar
  • 1 Tbsp. extra virgin olive oil
  • 1 Tbsp. pure maple syrup or honey
  • Zest of 1 orange
  • Sea salt and freshly ground black pepper to taste

    Instructions

  • In a large bowl combine quinoa, tomato, orange, pomegranate, cucumber, currants, onion, garbanzo beans, parsley and mint leaves
  • In a separate bowl whisk together orange juice, apple cider vinegar, olive oil, honey and orange zest. Pour over quinoa and mix well. Season with salt and pepper
  • Refrigerate for at least 2 hours or overnight, mixing half way through, allowing quinoa to absorb all the flavours
