Pure Dutch-process cocoa powder has been treated to reduce its natural acidity, giving it a smoother, mellower chocolate flavor and a darker color. Either can be used in this mousse, but the type of cocoa will affect the final flavor and appearance.
Ingredients & Substitutions
- Unsweetened cocoa powder: Regular unsweetened cocoa powder works best. No chocolate chips or chocolate to melt.
- Cool Whip: Use regular Cool Whip, thawed according to the package directions. This recipe was developed with Cool Whip, so I wouldn’t recommend swapping it for a homemade whipped cream without retesting the proportions.

Pro Tips From My Kitchen
Cool the cocoa mixture to room temperature before folding. It doesn’t need to be cold, but it should be at room temperature rather than warm. This helps the mousse maintain its fluffy texture.

Don’t overmix.
Fold gently until combined. Excessive stirring can knock out some of the air that gives the mousse its light texture.

Create two textures.
