Asparagus Soup With Mint

This asparagus soup with fresh mint is creamy, refreshing low carb and keto-friendly. I call this asparagus soup with mint magical.

Did you know that asparagus is loaded with nutrients such as folate, vitamins A, C, E and K, protein and has abundance of fiber? Asparagus soup is one of the easiest soups to make, since asparagus cooks in just minutes this recipe is fast and easy.

This delicious asparagus soup is perfect on cold winter days because you can serve it hot or on hot summer nights serving it cool to room temperature. Since asparagus is also very low in calories and has plenty of fiber this soup is super diet friendly. Enjoy!

 

 

 

 

 

Ingredients

  • 1 Tbsp. coconut oil
  • 1 medium onion, chopped
  • 2 garlic cloves, finely chopped or grated
  • 3 cups GF vegetable or chicken broth
  • 2 sprigs of mint
  • 2 lbs. asparagus, break hard part off and cut in half
  • ½ cup chopped parsley
  • 1 cup canned coconut milk
  • 2 Tbsp. fresh lime juice
  • Sea salt and GF black pepper to taste
  • ½ cup chopped chives

    Instructions

  • Saute onions in coconut oil until soft. Add garlic and cook until fragrant, about 30 seconds
  • Add broth and mint and simmer for 5 minutes. Remove the mint and add asparagus and parsley, cover and cook over low heat for 5 minutes
  • Remove from the heat and slightly cool. Transfer soup in batches to a high-speed blender or food processor, and process until almost creamy but still leaving small chunks of asparagus
  • Transfer soup back to the pot and stir in coconut milk and lime juice. Season with salt and pepper and reheat if serving hot. Laddle soup into bowls, top with chopped chives, and drizzle with extra coconut milk. Sometimes I add thinly sliced asparagus as a topping
