Spanish Rice

This rice dish is a meal on it’s own, just add a small salad and you have a well-balanced vegetarian meal. This delicious rice recipe will also compliment chicken, ribs or fish. The gentle flavours of fresh vegetables and spices, infuse the fluffy rice making it a favourite rice dish for all



2 tbsp. extra virgin olive oil
1 ½ cup white or brown basmati rice, soak in water for 20 minutes, then rinse well before using
½ cup organic red onion, chopped
2 garlic cloves, chopped
2 organic tomatoes, cut to small pieces
1 organic red or yellow pepper, cut to small pieces
1 cup diced mushrooms
1 tsp. organic GF cumin
1 tsp. organic GF chili powder
2 cups water
1 tsp. sea salt or to taste
½ cup parsley, chopped


Heat olive oil and add onions sauté for 3 minutes on medium heat, 
add garlic, peppers, mushrooms and cook 3 more minutes
Add cumin, chili powder, and rice and cook 3 more minutes gently stirring
, add tomatoes and cook two more minutes

Add water and salt, bring to boil and simmer on low heat for approximately 10 minutes covered, turn off the heat, and leave it covered for 5 minutes
Stir in parsley and cover until ready to serve
