Spanish Rice

This rice dish is a meal on it’s own, just add a small salad and you have a well-balanced vegetarian meal. This delicious rice recipe will also compliment chicken, ribs or fish. The gentle flavours of fresh vegetables and spices, infuse the fluffy rice making it a favourite rice dish for all



  • 2 tbsp. extra virgin olive oil
  • 1 ½ cup white or brown basmati rice, soak in water for 20 minutes, then rinse well before using
  • ½ cup organic red onion, chopped
  • 2 garlic cloves, chopped
  • 2 organic tomatoes, cut to small pieces
  • 1 organic red or yellow pepper, cut to small pieces
  • 1 cup diced mushrooms
  • 1 tsp. organic GF cumin
  • 1 tsp. organic GF chili powder
  • 2 cups water
  • 1 tsp. sea salt or to taste
  • ½ cup parsley, chopped
  • Instructions

  • Heat olive oil and add onions sauté for 3 minutes on medium heat, 
add garlic, peppers, mushrooms and cook 3 more minutes
  • Add cumin, chili powder, and rice and cook 3 more minutes gently stirring
, add tomatoes and cook two more minutes

  • Add water and salt, bring to boil and simmer on low heat for approximately 10 minutes covered, turn off the heat, and leave it covered for 5 minutes
  • Stir in parsley and cover until ready to serve
