Quick And Easy Vegetable Medley

This vegetarian recipe is bursting with delicious, delicate flavours and is packed with healthy nutrients, making it a perfect side to any meal. This side is as fresh as it gets.

Serves 4




2 tbsp. extra virgin olive oil
2 cups small white mushrooms
2 cups organic small cherry tomatoes
2 cups organic sweet peas
1 garlic clove, minced
3 organic green onions, cut to 1” pieces
½ cup organic fresh basil, torn into small pieces
Pinch of sea salt and organic GF freshly ground black pepper


In a large saucepan or wok heat olive oil and add all the ingredients except basil, salt and pepper, stir-fry for 3 minutes on medium to high heat
Add basil, salt and pepper and stir-fry another minute
Ready to serve!
