Vegan Carrot and Coriander Soup

This gluten-free vegan carrot and coriander soup is more vibrant than other typical vegan soup. Creamy and aromatic this soup is hearty, low in fat and is also dairy free. In this soup recipe, the distinct flavour of coriander nicely compliments the carrots. This is a super easy healthy soup recipe, enjoy!

 

 

Ingredients

  • 1 Tbsp. coconut oil
  • 1 medium size sweet onion, chopped
  • 4 carrots, diced
  • 1 garlic clove, chopped
  • 1 tsp. GF ground coriander
  • 4 cups gluten free vegetable stock
  • 1 small sweet potato, peeled and cut to bite size pieces
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp. fresh lemon juice
  • Sea salt and freshly ground GF black pepper to taste
  • Instructions

  • In a medium size soup pot over medium heat, heat coconut oil. Add onions and carrots and sauté for 5 minutes
  • Add garlic and coriander and cook until just fragrant, about 30 seconds
  • Add stock and sweet potato. Cover and cook over medium heat for 10 minutes or until vegetables are soft. Add cilantro, lemon juice and remove the soup from the heat
  • Puree soup in batches in a blender or food processor until smooth. Return back to the pot and re-heat just before serving
  • Garnish with fresh cilantro
