Instant Pot Barbacoa Beef Recipe

Ingredients
3 lb. boneless chuck roast, fat trimmed, cut into about 4" large pieces
1 medium onion, halved and thinly sliced
1 red bell pepper, sliced
4 garlic cloves, roughly chopped
1 - 2 + chipotle peppers, (or to taste), chopped
1 1/2 cups water
1/4 cup pure tomato paste
1/3 cup apple cider vinegar
1/4 cup sweetener such as pure maple syrup, honey, coconut sugar or brown sugar
1 large lime, juice and zest
2 Tbsp. GF ground cumin
1 Tbsp. GF dried oregano
2 tsp. Himalayan salt
1/2 tsp. GF ground black pepper
1/2 tsp. ground cloves
2 GF bay leaves
1 tsp. GF Liquid smoke (optional), but adds stunning flavour
Instructions
- Add chuck roast, onion, bell pepper, garlic, and chipotle pepper into the instant pot
- Whisk together remaining ingredients and pour into the instant pot
- Seal, select a manual setting and cook on high pressure for 75 minutes
- Allow the steam to release naturally
- Using two forks shred the meat and enjoy
