Gluten-Free Million Dollar Spaghetti Bake (No Meat Needed)

Ingredients
12 oz gluten-free spaghetti, broken in half
MARINARA SAUCE
¼ cup extra virgin olive oil
16 oz cremini mushrooms, cleaned and roughly chopped
1 large yellow onion, roughly chopped
2 garlic cloves, grated or minced
2 Tbsp gluten-free Italian seasoning
(or 1 Tbsp oregano + 1 Tbsp basil + 1 tsp thyme)
1 bay leaf
1 (24 oz) jar gluten-free marinara sauce, or my homemade marinara sauce
2 cups buttermilk
1 Tbsp tapioca starch
1 cup shredded mozzarella cheese
¾ cup grated Parmesan cheese
⅛ tsp gluten-free ground nutmeg
Sea salt, to taste
TOPPING
1½ cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
Fresh basil or parsley, optional
Instructions
- Preheat oven to 375°F. Lightly grease a 9 x 13-inch baking dish.
- Cook gluten-free spaghetti in well salted water until just al dente. (Underboil the noodles 3 minutes less than the package instructions call for). Reserve 1 cup of pasta water, then drain.
- Add onion to a food processor and pulse until finely chopped. Repeat with mushrooms until they resemble small pieces similar to ground meat.
- Heat olive oil in a large pot. Add onion and cook until softened. Add garlic, seasoning, bay leaf, and mushrooms. Season with salt and cook over medium heat until the mushroom moisture has evaporated, about 3 minutes.
- Stir in marinara sauce and reserved pasta water. Simmer for 10 minutes
- Whisk together buttermilk, tapioca starch, and nutmeg until smooth. Add to the sauce along with 3/4 cup Parmesan and 1 cup mozzarella. Cook over medium heat for 2–3 minutes, stirring, until creamy and slightly thickened. Do not bring to a hard boil. Taste and adjust seasoning if needed.
- Remove the pot from the heat. Add the cooked spaghetti and gently fold until most of the pasta is coated with sauce, leaving a few less coated. Transfer to the prepared baking dish and use kitchen tongs to create a few loose swirls on top.
- Scatter small dollops of mozzarella over the top, then sprinkle with Parmesan, leaving some of the spaghetti exposed. (See photo) Bake uncovered for 20–25 minutes until hot and bubbling.
- Rest for 10 minutes before serving. Garnish with fresh basil or parsley if desired.
