This week I’ve created fresh, crispy cucumber and smoked salmon appetizers they are healthy, elegant, and deliciously addictive…they disappear in minutes at any party! This low-carb, low-calorie appetizer is crunchy and tangy, with smoky salmon and green onion flavor, accented with just the right hint of spice and a drizzle of balsamic glaze, all without ever turning on the stove.

Balsamic glaze is the secret finishing touch. Do not use balsamic vinegar.
You can prep ahead the cucumber and the mixture a day in advance. Keep refrigerated in closed containers. Assemble no more than 6 hours before the party and cover with plastic wrap and keep in the fridge until serving.
Substitute Tabasco or your favorite GF hot sauce if you don’t have gochujang—just make sure it’s gluten-free.
Don’t have green onions, use finely chopped red onion
Don’t like nori, you can use butter lettuce leaves or very thinly sliced cabbage
What is Gochujang?
Gochujang is a traditional Korean fermented chili paste made from red chili powder, glutinous rice, fermented soybeans, and salt. It has a deep, savory flavor that’s sweet, slightly smoky, and spicy all at once, adding rich heat and umami to dishes.

Partially peel the English cucumbers, leaving some skin for texture and flavor. Slice into ¾-inch rounds.

Using a melon baller or small spoon, scoop out the centers about halfway down to create small cups.

In a bowl, combine the chopped smoked salmon, green onions, fresh lemon juice, gochujang paste, and black pepper. Mix well.

Gently press the salmon mixture firmly into each cucumber cup so the filling stays in place.

Arrange nori sheets on a serving platter and place the filled cucumber bites on top.

Lightly drizzle with balsamic glaze and garnish with thin lemon slices before serving.
