Gluten-Free Firecracker Chicken & Mozzarella Meatballs

Meatballs are always popular appetizers. These gluten-free firecracker chicken and mozzarella meatballs are tender, cheesy spiced up meatballs, making them a big hit at any party!

This gluten-free meatball recipe requires very little work and you can make them a day in advance. This is why these firecracker chicken and mozzarella meatballs are so popular as appetizers or when you are entertaining large crowds.

Ingredients

  • 2 lb. ground chicken
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup GF breadcrumbs
  • 4 garlic cloves, minced
  • 2 tsp. GF dried basil
  • 1 tsp. GF paprika
  • 1 tsp. Pure sea salt
  • FIRECRACKER SAUCE
  • 1/2 cup GF hot sauce, ( I used this sauce )
  • 1/2 cup pure maple syrup or honey
  • 2 Tbsp. apple cider vinegar
  • 1 garlic clove, minced
  • Garnish: thinly sliced green onions

    Instructions

  • Preheat oven to 450 F and line a large baking tray with parchment paper
  • In a large bowl combine first 8 ingredients. Do not over mix the ingredients or the meatballs will become dry
  • Shape the meat mixture into balls about the size of a golf ball and place on a baking tray without touching. Bake for 10 minutes
  • While the meatballs are baking, in a small saucepan combine firecracker sauce ingredients. Cook over medium-high heat until the sauce comes to a boil. Set aside
  • After the meatballs have been baking for 10 minutes, generously brush each meatball with the firecracker sauce and bake for 5 more minutes. Garnish with sliced green onions
