This Classic Herb and Onion Stuffing Recipe is the perfect gluten-free addition to your holiday spread or any special occasion meal. Made with homemade gluten-free Italian bread, fresh herbs, and savory vegetables, it’s a delicious and comforting side dish for those following a gluten-free diet. Packed with bold flavors, tender sautéed onions and celery, and crispy bread cubes, this easy stuffing recipe is one of my all-time favorite holiday dishes!

3 Steps to Classic Gluten-Free Herb and Onion Stuffing

1)Prepare the Bread: Cut bread into 1-inch cubes and toast in the oven

2) Make the Celery and Onion Mixture: Sauté chopped onion and celery, in butter, until the vegetables are softened and the onions are translucent.

3) Combine and Bake: Toss the bread cubes with fresh herbs, onion mixture, and broth with eggs. Add to prepared baking dish and bake covered first 20 minutes, then crisped without foil paper.

Optional Add-ins for Flavorful Gluten-Free Stuffing

  • Bacon Flavor: Substitute some of the butter with bacon drippings for a richer, smoky flavor.
  • Sesame Seeds: Add toasted sesame seeds as a topping before baking for a crunch.
  • Nuts & Dried Fruit: Incorporate chopped nuts (walnuts or pecans) or dried fruit (cranberries or raisins) for added flavor and texture.
  • Apples: Use 2 apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced for sweetness and freshness.

Make-Ahead

Prepare Ahead: This stuffing can be made ahead of time, which makes it perfect for busy holiday preparations. Prepare the entire stuffing (up to the point of baking) and store it covered in the refrigerator for up to 24 hours before baking.

Freezing: You can also freeze the stuffing after it has been assembled (before baking). Wrap it tightly in plastic wrap and foil, and freeze for up to 2 months. To bake from frozen, thaw in the refrigerator overnight, then follow the baking instructions, adding an extra 10 minutes.

Serving Ideas for Stuffing Leftovers:

Stuffing Muffins: If you have leftover stuffing, you can bake it in muffin tins for individual servings. Just spoon the stuffing into greased muffin cups, top with a little extra butter, and bake at 350 F for about 15-20 minutes, or until golden and crispy on top.

Stuffing Casserole: Reheat leftover stuffing in a casserole dish, topping with shredded cheese (if desired), and bake until heated, and the top is crispy.

Stuffing Sandwiches: Use leftover stuffing as a filling for a turkey or veggie sandwich, adding cranberry sauce and greens for extra flavor.

Storing

Store any leftover stuffing in an airtight container in the refrigerator for up to 3 days. Or, if you have a lot of leftovers, you can freeze stuffing in an airtight container or freezer-safe bag for up to 2 months. To reheat, thaw in the refrigerator overnight and bake at 350 F for 10 – 15  minutes, until heated and crispy.
