Spiced Roasted Beet Salad

This enticingly spiced roasted beets salad has a lovely contrast of salty feta cheese. The remarkably full-flavoured beets deliver quite a punch to this easy to make simple healthy salad

Ingredients

  • 4 medium size beets, any colour
  • 2 Tbsp. GF balsamic vinegar
  • 1 Tbsp. extra virgin olive oil
  • ½ tsp. GF coarsely ground black pepper
  • ¼ tsp. sea salt
  • ¼ tsp. GF ground cinnamon
  • ¼ tsp. GF chili powder
  • ½ cup crumbled feta cheese
  • ¼ cup thinly sliced green onions
  • Salad greens for 4
  • Instructions

  • Preheat oven to 400 F and line a baking sheet with parchment paper
  • Remove stems and roots of the beets and peel each one with a vegetable peeler. Cut the beets to 1-inch chunks
  • Place the beets in a large bowl and add balsamic vinegar, olive oil, black pepper, salt, cinnamon and chili powder and mix well
  • Place beets on prepared baking sheet and roast for 35 minutes, or until tender. Remove beets from the oven and cool completely
  • To serve, arrange salad greens on a plate and top with roasted beets. Scatter with feta cheese and green onions
