Next, place the beets in a large pot with water. Bring to a boil, cover, and reduce the heat to medium. Cook until toothpick tender, depending on the size, 40 - 50 minutes. Add the sliced carrots at the end and cook for 3 minutes longer.

Drain the beets and cool them until you can easily handle them. Then, peel the skin and dice them

Add cooled beets, carrots, olive oil, and apple cider vinegar in a large bowl and season with salt and cracked black pepper. Gently mix to coat the beets and carrots.

Transfer the beets to a salad platter and drizzle with balsamic vinegar. Then top with feta cheese, green onions, and herbs if using. At this point, you can cover the platter with plastic wrap and refrigerate until ready to serve. Toss just before serving.
