Simple Carrot and Beet Salad

This carrot and beet salad is light and refreshing. In this salad, the carrots and beets are flavoured with a vinaigrette made with cilantro and fresh mint. The salad is a healthy addition to a well-balanced diet

 

Ingredients

  • 4 medium beets
  • 4 medium carrots, peel and dice
  • VINAIGRETTE
  • 1 medium size onion, finely sliced
  • 1/4 cup (60 mL) apple cider vinegar
  • 1/4 cup (60 mL) extra virgin olive oil
  • ¼ cup (60 mL) chopped fresh cilantro
  • 2 Tbsp (30 mL) chopped fresh mint
  • 1 tsp (5 mL) agave nectar
  • Sea salt and GF ground black pepper to taste

    Instructions

  • Cook the beets in water for about 30 minutes, or until you can pierce the beet with a toothpick. Drain the water and cool. Once the beets have cooled peel and thinly slice
  • Cook carrots in water for 2 minutes and then drain and cool
  • In a small glass bowl whisk all the vinaigrette ingredients together
  • Place beets and carrots into a large bowl and add the vinaigrette. Gently toss to combine, cover and refrigerate overnight
  • To serve, bring to room temperature and gently stir
