Ingredients
For the Base:
1/2 cup salted butter, softened. (If using unsalted, add 1/4 tsp sea salt)
1/4 cup (55 g) light brown sugar or sugar of choice
1 large egg, at room temperature
2 tsp pure vanilla extract
3/4 cup (111 g) gluten-free all-purpose flour blend
1/2 cup (56 g) almond flour
For the Filling:
1 cup fruit jam (your choice: raspberry, cherry, strawberry, apricot, etc.)
For the Topping:
8 ounces (about 1 cup) gluten-free chocolate chips (semisweet or bittersweet)
1/2 cup heavy cream
1 cup roughly chopped raw pecans
Instructions
- Preheat the Oven: Preheat oven to 400 F. Line an 8x8-inch baking dish with parchment paper.
- Prepare the Base: In a bowl, mix the softened butter and brown sugar until smooth. Add the egg and vanilla extract, mixing to combine. Stir in the gluten-free all-purpose flour blend and almond flour until well incorporated. Transfer the mixture to the prepared baking dish, spreading it evenly over the bottom. Bake for 15 minutes.
- Add the Filling: Once the base has finished baking, while it's still hot, spread the fruit jam evenly over the base layer. (Keep the oven on.)
- Make the Topping: Place the chocolate chips in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer—do not let it boil! Pour the hot cream over the chocolate chips and let it sit for about 2-3 minutes to soften. Gently stir the mixture with a spatula until smooth, then stir in the chopped pecans.
- Finish Baking: Spread the chocolate pecan mixture evenly over the jam layer. Return the dish to the oven and bake for an additional 15 minutes.
- Cool and Serve: Allow the cake to cool in the pan, then refrigerate for at least 2 hours before cutting into squares.
