Gluten-Free Banana Chocolate Chip Bread

Do you love banana bread? Here is a recipe for gluten-free banana chocolate chip bread that is a true winner! This simple to make sweet bread is made with coconut oil, maple syrup, plenty of bananas, carrots and chocolate chips. Combination of these ingredients adds a rich and delicious flavour to this hearty bread. Serve as a snack for lasting energy

 

 

 

Ingredients

  • 1 ¾ cup blanched GF almond flour
  • ¼ cup all purpose GF flour blend
  • 1 Tbsp. GF ground cinnamon
  • ¼ tsp. sea salt
  • 1 tsp. GF baking soda
  • 1 cup GF semi-sweet chocolate chips
  • 3 very ripe bananas, mashed with a fork
  • 2 medium carrots, grated
  • ½ cup pure maple syrup
  • 2 eggs at room temperature, whisked (for egg-free version you can use egg substitute just as good)
  • ½ cup melted coconut oil
  • Instructions

  • Preheat oven to 350 F and line a 6 x 8-inch baking pan with parchment paper
  • In a large bowl mix together dry ingredients
  • In a separate bowl mix bananas, carrots, maple syrup, eggs or (egg sub) and coconut oil
  • Add wet ingredients to dry and mix well
  • Pour batter into prepared baking pan and bake for 45 minutes. Cool completely before serving.
