Cabbage Fruit Salad With Citrus Ginger Dressing

Liven up a simple fruit salad with fresh, crunchy red cabbage and citrus ginger dressing. The red cabbage is somewhat peppery complimenting the fruit, nuts and seeds perfectly. The addition of ginger makes everything fit together. I call this healthy vegan salad heaven!

Ingredients

  • CITRUS GINGER DRESSING
  • 1 Tbsp. pure maple syrup
  • 2 tsp. Minced ginger
  • 1 tsp. Extra virgin olive oil
  • 1 tsp. orange zest
  • 1 tsp. lime zest
  • 1/4 cup fresh-squeezed orange juice
  • 1 tsp. fresh lime juice
  • SALAD
  • 3 cups thinly sliced red cabbage
  • 2 apples, cored and thinly sliced
  • 1 cup sliced strawberries (about 8 oz.) or blueberries
  • 1/2 dried red currants, soaked in hot water for 1 minute, then drain
  • 1/2 cup pecans
  • 1/4 cup pumpkin seeds
  • Instructions

  • For the dressing mix everything until evenly blended
  • To assemble the salad, place cabbage, apples, strawberries, currants and pecans into a large bowl. Drizzle with dressing and gently toss
  • Sprinkle with pumpkin seeds
