Paleo Vanilla Chocolate Chip Muffins

This is a classic grain-free vanilla muffin made with chocolate chips. The muffin is filling and fulfilling and can be served for breakfast or an afternoon snack. The chocolate chips add just enough flavour to satisfy your craving for chocolate without being overwhelming

Ingredients

  • 2/3 cup butter, melted
  • 2/3 cup pure maple syrup
  • 3 large eggs at room temperature, whisked
  • 2 tsp. Pure vanilla extract
  • 2 cups blanched almond flour
  • 1/2 cup tapioca flour/starch
  • 1 tsp. GF aluminum free baking soda
  • 1 1/4 cup GF chocolate chips (preferably 80% + cocoa)
  • Instructions

  • Preheat oven to 375 F and line a muffin pan with liners
  • In a medium bowl whisk together, butter, maple syrup, eggs and vanilla
  • In a separate bowl mix almond flour, tapioca flour, baking soda, and cinnamon
  • Add wet ingredients to dry and mix. Gently stir in chocolate chips. Do not over mix
  • Pour batter into prepared muffin pan and bake for 25 - 28 minutes, until a toothpick inserted in the middle of the muffin comes out clean. Remove from the oven and place muffins on a cooling rack to cool
