Kid-Friendly Gluten-Free Spaghetti Meatball Soup

Ingredients
1 lb. lean ground beef (or ground chicken)
1 large egg
1/2 cup shredded mozzarella cheese
1 garlic clove, minced
1/2 tsp gluten-free Italian seasoning
1/2 tsp sea salt
SOUP BROTH
2 tbsp olive oil
1 medium onion, finely diced
2 medium carrots, finely diced
1 garlic clove, minced
1 tsp gluten-free Italian seasoning
1 GF bay leaf
1 (8 oz) can tomato paste
4 cups gluten-free beef broth (or chicken broth) + 2 cups of water, if unsalted add extra salt to taste
1 tbsp maple syrup or sugar
1 (15-ounce) can cannellini beans, drained and rinsed
4 oz. (113g) gluten-free spaghetti, broken into 1- to 2-inch pieces
1/2 cup grated Parmesan cheese
1 1/2 tsp sea salt, or to taste depending on the broth
Instructions
- Make the meatballs: In a large bowl, combine the ground meat, egg, mozzarella, garlic, Italian seasoning, and sea salt. Mix just until combined and roll into 1-inch meatballs. (I used a small cookie scoop for perfect meatballs).
- Heat the olive oil in a large soup pot over medium heat. Add the onion and carrots and cook until softened, about 5 minutes. Stir in the garlic, Italian seasoning, and bay leaf, cooking for about 30 seconds until fragrant.
- Add the tomato paste and mix with the onion mixture
- Gradually add in the broth and 2 cups of water, whisk to combine. Stir in the sweetener and salt, then bring to a gentle simmer.
- Carefully add the meatballs. Cover and simmer for about 10 minutes.
- Gently stir in the cannellini beans and broken gluten-free spaghetti. Continue simmering for 8–10 minutes, or until the pasta is al dente (firm to the bite). Gently stir the noodles a couple of times so they don’t stick to the bottom of the pot.
- Remove from the heat and stir in the Parmesan cheese until melted into the broth.
- Taste and adjust the seasoning if needed. Let the soup rest for 15 minutes before serving. The pasta will finish cooking while the flavors continue to develop.
