Hearty Black Bean Guacamole Dip

Black bean guacamole is a hearty dip made with black beans and avocado. This delicious dip is flavoured with cumin, garlic and fresh lime juice. Serve with gluten-free corn chips, fresh cilantro and lime wedges. Enjoy!

Ingredients

  • 1 mediums size sweet onion, roughly chopped
  • 2 medium size tomatoes quartered
  • ½ jalapeno pepper, de-seeded and chopped
  • 1 tsp. GF ground cumin
  • 2 garlic cloves, minced
  • 1 tsp. sea salt
  • 2 ripe avocados quartered
  • ½ bunch cilantro, roughly chopped
  • 1 x (15 oz.) can organic black beans (preferably without salt) drain and rinse well
  • Juice of 1 lime
  • Instructions

  • Add onion, tomatoes, jalapeno, cumin, garlic and salt into a food processor and pulse 5 times
  • Add avocado, cilantro, lime juice and ¼ of the black beans Pulse 3 times or until you reach desired consistency. Do not over blend
  • Transfer dip to a bowl and stir in remaining beans.
  • Serve with lime wedges and fresh cilantro
  • TIP ~ if you do not have a food processor, you can chop everything into small pieces with a sharp knife and mix together
