Ingredients
1 lb. apricots, sliced
4 tbsp brown sugar
1 tbsp GF ground cinnamon
1/2 cup (1 stick) butter, softened
1/2 cup sugar
3 large eggs, separated, at room temperature
3/4 cup milk, at room temperature
2 tsp pure vanilla extract
1 tbsp lemon zest
2 cups (296 g) gluten-free measure-for-measure 1:1 flour blend
1 tbsp GF baking powder
3/4 tsp sea salt
1/3 cup sliced almonds
Instructions
- Preheat your oven to 375 F and generously butter a 9x13-inch baking pan.
- Toss apricot slices with brown sugar and cinnamon, and set aside for 15 minutes to enhance their flavor and release juices
- In a mixing bowl, whip the egg whites until fluffy. In another bowl, cream together butter, 1/2 cup sugar, and egg yolks. Add milk, vanilla extract, and lemon zest, mixing until well combined.
- Whisk together flour, baking powder, and salt. Fold into the wet ingredients. Add the egg whites and gently combine
- Fold the spiced apricots into the batter, reserving the juices.
- Spread the batter evenly into the prepared baking pan. Drizzle with the reserved apricot juices and sprinkle sliced almonds on top.
- Bake for 32 to 35 minutes until golden brown and firm to the touch. Let cool in the baking dish before slicing.
- Dust with powdered sugar if desired before serving.
