In a large soup pot, sauté the chopped onions in olive oil until they are softened

Add carrots, celery, potatoes, garlic, and thyme, and saute for another minute, stirring frequently

Pour the chicken broth, water, add bay leaf, and season with salt and pepper. Bring the soup to a boil and then reduce the heat to simmer. Let it cook covered until the vegetables are tender, about 12 - 15 minutes.

While the soup is simmering, in a separate pan, sear the sliced wieners

Once the vegetables are tender, remove the bay leaf, and using an immersion blender, blend the soup until it reaches your desired consistency. If you don't have an immersion blender, transfer half the soup to a blender, blend, and then return it to the pot. (I recommend doing this in batches)

Add the sliced wieners to the soup and let it simmer for two more minutes to allow the flavors to meld.

Stir in cream and adjust the seasoning if needed
