Fudgy No-Bake Chocolate Date Bars with Coconut and Pecans

Ingredients
3 cups (510 g) packed pitted Medjool dates, roughly chopped
2 cups (220 g) pecans
1½ cups (120 g) unsweetened shredded coconut, divided
7 tbsp(42 g) coconut flour
6 tbsp (30 g) unsweetened cocoa powder
½ tsp sea salt
¼ cup (56 g) melted unsalted butter (or vegan butter or melted coconut oil)
2 tsp pure vanilla extract
Optional: 2 tablespoons pure maple syrup for a sweeter bar.
Instructions
- Soak the dates: Place the chopped dates in a bowl and cover with hot water. Let stand for 3 minutes, then drain, reserving 2 tablespoons of the water
- Process the nuts: Add the pecans and 1 cup of the shredded coconut to a food processor. Pulse until finely chopped.
- Make the mixture: Add the dates, coconut flour, cocoa powder, salt, melted butter, vanilla, and maple syrup (if using). Process until the mixture is well combined and holds together when pressed between your fingers. If needed add the reserved water from the dates.
- Press into the pan: Line an 8 x 8-inch pan with parchment paper. Transfer the mixture to the pan, sprinkle with the remaining ½ cups shredded coconut, then place another sheet of parchment paper on top and press firmly into an even layer.
- Chill: Refrigerate for at least 4 hours, or until firm. Lift the bars from the pan using the parchment. Slice and serve
