Classic Chicken Tortilla Soup

When it comes to Mexican dishes chicken tortilla soup is on top of the list. The soups unique flavour profile comes from cumin, chili and black beans creating a truly hearty and delicious meal. Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, diced
  • 2 stalks of celery, diced
  • 2 medium carrots, diced
  • 3 garlic cloves, minced
  • 2 tsp. GF ground cumin powder
  • 2 tsp. GF chili powder
  • 4 cups gluten-free chicken broth
  • 1 bay leaf
  • 1 x (15 oz.) can diced pure tomatoes
  • 1 x (15 oz.) can organic black beans, drain and rinse well
  • 1 lb. Skinless boneless chicken breast
  • 1 tsp. Pure sea salt
  • Juice of 1 lime with zest
  • Optional toppings; cilantro, avocado, limes, gluten-free corn chips and sour cream

    Instructions

  • In a large pot over medium heat, sauté onions until soft about 5 minutes
  • Stir in bell pepper, celery, carrots, garlic, cumin and chili powder and cook for 1 minute
  • Add chicken broth, bay leaf, tomatoes, black beans, chicken and salt. Bring to a boil and then reduce to a simmer. Cover and cook for 30 minutes
  • Remove the chicken and bay leaf. Using a fork shred the chicken and set aside
  • Transfer two cups of soup into a blender and blend until smooth. Return with the shredded chicken and lime back into the pot and bring to a boil. Remove from the heat
  • Serve with desired toppings
