Quick and Easy Gluten Free Apple Cinnamon Muffins

This quick and easy gluten free apple cinnamon muffin recipe takes only 10 minutes of prep time. The fresh taste of apples combined with cinnamon makes these muffins moist and delicious. 1 cup almond, pecan or hazelnut flour
1 cup gluten free all purpose flour blend
1 Tbsp. GF aluminum free baking powder
2 Tbsp. hemp seeds (optional)
1 tsp. xanthan gum (do not add if your all purpose GF flour has xanthan gum already)
1 ½ tsp. GF ground cinnamon
½ tsp. sea salt
¾ cup milk or non-dairy milk (almond, cashew, rice, coconut)
½ cup pure maple syrup
½ cup extra virgin olive oil
1 large eggs or flax egg (1 Tbsp. ground flaxseed + 3 Tbsp. water, soaked for 15 min)
1 tsp. pure vanilla extract
2 large organic apples, skin on, cored and chopped into ½-inch chunks


Preheat oven to 375 F and line a muffin pan with paper liners
In a large bowl, combine dry ingredients
In separate bowl whisk milk, maple syrup, olive oil, egg and vanilla. Add to dry ingredients and thoroughly mix. Stir in apples until just combined. Do not overmix
Pour batter into prepared muffin pan and bake for 35 minutes until golden
Rest in muffin pan for 10 minutes before transferring onto a cooling rack
