Indian Spiced Beef And Dates Ragout

Indian spices developed a dubious reputation in modern cuisine. In this recipe, the carefully selected spices bring the beef to another level. The seasoned beef is slowly simmered with dates in lime juice creating a sensational rich flavour

This recipe is an easy gluten free one-pot dish for those nights when you crave something more than just simple beef. Serve over one of our simple rice recipes or with steamed veggies

Ingredients

2 lb. lean beef stew meat, cut into 1-inch cubes
4 garlic cloves, roughly chopped
1 Tbsp. minced ginger
1 tsp. ground cumin
1 tsp. garam masala
1 tsp. coriander
1 tsp. turmeric
1/2 tsp. ground cinnamon
1 Tbsp. grape seed or coconut oil
1 cup pitted dates
1 red or yellow bell pepper, thinly sliced
ΒΌ cup fresh lime juice
1 tsp. sea salt
1 bunch fresh cilantro, roughly chopped
Note: add a little cayenne pepper if you like spicy. If you want to simplify this recipe use 2 Tbsp. of curry powder instead of the dry spices

Instructions

Season beef with garlic, ginger, cumin, turmeric, cinnamon, garam masala, coriander and salt. Refrigerate for 30 minutes
In a large pot or dutch oven sear beef in oil over medium-high heat until brown
Add dates, bell peppers, lime juice and 1 cup of water. Cover and simmer for 2 hours or until meat is tender. Add a little more water if needed
Remove from the heat and stir in cilantro
