Gluten-Free Vegetarian Pizza

When it comes to pizza it is all in the crust, sauce and cheeses. Our simple yet flavourful sauce makes it all come together and the vegetables are particularly tasty when they are teamed with your favourite cheese.
Makes two 16 inch pizzas

For the sauce ~ 1 tbsp. extra virgin olive oil • 1 garlic clove, minced • 1 tsp. organic GF dried basil leaves • ½ tsp. organic GF paprika (if you like spicy you can add pinch of cayenne) • 2 organic tomatoes, crushed • pinch of sea salt
For the topping ~ 2 cups shredded Mozzarella cheese • 2 organic tomatoes, thinly sliced • ½ cup finely chopped yellow or red onion • 2 cups organic baby spinach • 1 cup thinly sliced mushrooms • 16 slices about 1 inch by 3 inches of your favourite cheese, such as Camembert, Gruyere, Brie, Emmental or Fontina
Preheat oven to 400 F
For the sauce ~ heat olive oil in a medium saucepan and add garlic, cook until just fragrant about a minute. Then stir in basil and paprika, add tomatoes, water and salt and cook for 3 minutes on medium to high heat while stirring. Done!
To construct pizza, spread the sauce evenly on both pizzas, then add in even layers, Mozzarella, tomatoes, onions, spinach, mushrooms and top with your favourite cheese slices.
Bake 15 to 17 minutes or until the crust t is crispy and the cheese has melted.
This pizza freezes well, freeze before cooking
