Gluten-Free Citrus Mandarin Muffins

These citrusy moist muffins with added touch of mandarins are a must try recipe. They are explosively delicious. Enjoy!

Ingredients

  • 1 cup brown rice flour
  • 1 cup all purpose gluten free flour (I used Artisan blend)
  • ½ cup almond flour
  • 1 tsp. baking soda
  • ¼ tsp. sea salt
  • 1 cup freshly squeezed orange juice
  • ½ cup pure maple syrup or agave nectar
  • 1/3 cup extra virgin olive oil
  • ¼ cup freshly squeezed lemon juice
  • 2 large eggs
  • 1 tsp. pure vanilla
  • 1 tsp. freshly minced ginger
  • 1 tsp. lemon zest
  • 1 tbsp. turbinado raw sugar for topping (optional)
  • 5 small mandarin oranges, peel and separate into sections
  • NOTE: All ingredients must be gluten-free and preferably organic
  • Instructions

  • Preheat oven to 375 F and line a 12-muffin pan with parchment paper liners
  • Place mandarin sections on the bottom of each muffin cup (4 pieces per cup)
  • In a large bowl, whisk together first 5 ingredients
  • In a separate bowl beat together balance of ingredients except for turbinado sugar
  • Add wet ingredients to dry and beat the batter until smooth, about a minute
  • Using a spoon, drop the batter into the muffin cups and sprinkle with turbinado sugar
  • Bake for 35 minutes or until golden and firm to touch. Cool the muffins in the muffin pan for 10 minutes then transfer the muffins onto a cooling rack
