Gluten-Free Citrus Mandarin Muffins

Instructions

  • 1. Preheat oven to 375 F and line a 12-muffin pan with parchment paper liners
  • 2. Place mandarin sections on the bottom of each muffin cup (4 pieces per cup)
  • 3. In a large bowl, whisk together first 5 ingredients
  • 4. In a separate bowl beat together balance of ingredients except for turbinado sugar
  • 5. Add wet ingredients to dry and beat the batter until smooth, about a minute
  • 6. Using a spoon, drop the batter into the muffin cups and sprinkle with turbinado sugar
  • 7. Bake for 35 minutes or until golden and firm to touch. Cool the muffins in the muffin pan for 10 minutes then transfer the muffins onto a cooling rack
