1 cup brown rice flour
1 cup all purpose gluten free flour (I used Artisan blend)
½ cup almond flour
1 tsp. baking soda
¼ tsp. sea salt
1 cup freshly squeezed orange juice
½ cup pure maple syrup or agave nectar
1/3 cup extra virgin olive oil
¼ cup freshly squeezed lemon juice
2 large eggs
1 tsp. pure vanilla
1 tsp. freshly minced ginger
1 tsp. lemon zest
1 tbsp. turbinado raw sugar for topping (optional)
5 small mandarin oranges, peel and separate into sections
NOTE: All ingredients must be gluten-free and preferably organic

Preheat oven to 375 F and line a 12-muffin pan with parchment paper liners
Place mandarin sections on the bottom of each muffin cup (4 pieces per cup)
In a large bowl, whisk together first 5 ingredients
In a separate bowl beat together balance of ingredients except for turbinado sugar
Add wet ingredients to dry and beat the batter until smooth, about a minute
Using a spoon, drop the batter into the muffin cups and sprinkle with turbinado sugar
Bake for 35 minutes or until golden and firm to touch. Cool the muffins in the muffin pan for 10 minutes then transfer the muffins onto a cooling rack
