Vegan Kale Nacho Chips

Don’t love kale but love chips? Then you must try these healthy zesty kale nacho chips. The kale is deliciously flavoured with spices and then baked to crispy delicious chips. Now you can enjoy crispy chips with health benefits. These naturally gluten-free kale chips are very addictive so it may be a good idea to double the recipe!

Ingredients

  • 1 bunch kale, stems removed
  • 2 Tbsp. Extra virgin olive oil
  • 1/3 cup raw cashews
  • 3 Tbsp. Raw or roasted unsalted sesame seeds
  • 2 Tbsp. Fresh lemon juice
  • 1/3 cup nutritional yeast, divided
  • 1 tsp. GF ground cumin
  • 1 tsp. GF chilli powder
  • 1 tsp. GF garlic powder
  • 1/2 tsp. Pure sea salt
  • Instructions

  • Preheat oven to 300 F and line a large baking sheet with parchment paper. You may need 2 baking sheets
  • In a large bowl combine kale with olive oil, making sure the kale is well coated with the oil
  • Add cashews, sesame seeds, lemon juice, half the nutritional yeast, and spices in a food processor/blender and blend until almost smooth. Scraping the sides as needed
  • Add mixture to kale and blend using your hands until thoroughly coated
  • Spread the kale on prepared baking sheet(s) and sprinkle with remaining nutritional yeast
  • Bake for 30 minutes turning/tossing halfway through to allow for even baking
