1 Tbsp. extra virgin olive oil or coconut oil1 yellow onion, chopped3 cloves of garlic, crushed1 red bell pepper, cut into small pieces1 ½ pound lean ground turkeySpices ~ 2 Tbsp. GF chili powder, 1 Tbsp. GF ground cumin, 1 GF bay leaf, 1 tsp. sea salt, ½ tsp. GF hot chili pepper flakes or to taste2 cups water2 medium carrots, diced2 cups cooked black beans or you can used organic canned rinsed and drained1 cup frozen corn or fresh corn2 cups fresh diced tomatoes2 cups pumpkin puree (steam peeled pumpkin and process in food processor until creamy. Instructions
Heat oil over medium heat in a heavy bottom large pot. Add onions and cook until soft. Add garlic and red pepper and stir to combineIncrease the heat to medium-high. Add turkey and cook until no longer pink while breaking up the meat. Add spices and stir to combineAdd balance of ingredients except for pumpkin puree and cook over low heat covered for 1 hour. Stir couple of times in-betweenAdd pumpkin puree and cook 15 more minutesTo serve, add grated cheddar cheese, or sour cream if you wish, and top with fresh parsley
