Gluten Free Skinny Turkey Pumpkin Chili

This gluten free chili recipe has the flavours of classic chili but is on the lighter side. The mild sweetness of pumpkin balances the exotic chili spices with a nice velvety texture. This recipe is packed with healthy nutrients



  • 1 Tbsp. extra virgin olive oil or coconut oil
  • 1 yellow onion, chopped
  • 3 cloves of garlic, crushed
  • 1 red bell pepper, cut into small pieces
  • 1 ½ pound lean ground turkey
  • Spices ~ 2 Tbsp. GF chili powder, 1 Tbsp. GF ground cumin, 1 GF bay leaf, 1 tsp. sea salt, ½ tsp. GF hot chili pepper flakes or to taste
  • 2 cups water
  • 2 medium carrots, diced
  • 2 cups cooked black beans or you can used organic canned rinsed and drained
  • 1 cup frozen corn or fresh corn
  • 2 cups fresh diced tomatoes
  • 2 cups pumpkin puree (steam peeled pumpkin and process in food processor until creamy. Or you can use canned GF pure pumpkin puree)

  • Heat oil over medium heat in a heavy bottom large pot. Add onions and cook until soft. Add garlic and red pepper and stir to combine
  • Increase the heat to medium-high. Add turkey and cook until no longer pink while breaking up the meat. Add spices and stir to combine
  • Add balance of ingredients except for pumpkin puree and cook over low heat covered for 1 hour. Stir couple of times in-between
  • Add pumpkin puree and cook 15 more minutes
  • To serve, add grated cheddar cheese, or sour cream if you wish, and top with fresh parsley
