Gluten Free Pasta With Turkey And Spinach

This pasta dish is very tasty and light Italian dish. Using lean turkey and fresh spinach with added classic Italian herbs and spices makes this dish healthy and delicious. Skinless turkey is low in fat and high in protein with many health benefits

 

Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1 ½ lb. ground lean turkey
  • 3 garlic cloves, minced
  • 1 Tbsp. GF dried basil
  • 1 tsp. GF dried oregano leaves
  • 1 tsp. GF paprika
  • 1 bunch fresh curly parsley, chopped
  • 4 large ripe tomatoes, chopped
  • ½ tsp. sea salt
  • 1 cup water
  • GF hot chili pepper flakes to taste (optional)
  • 12 oz. fresh baby spinach
  • 16 oz. gluten free spaghetti, cook as per package directions
  • 1/2 cup fresh Parmesan cheese

    Instructions

  • Using a large non-stick pan heat olive oil over medium-high heat. Add turkey and stir-fry until lightly browned
  • Add garlic, basil, oregano, paprika, parsley, tomatoes, and salt and while stirring continue cooking for 5 more minutes. Add water and simmer for 10 more minutes.
  • In a separate non-stick pan over medium heat, add a splash of olive oil and heat over medium heat. Add spinach and stir-fry for one minute or until the spinach starts to wilt
  • Place pasta in a large serving bowl, add meat mix and spinach and gently toss until all ingredients are well combined. Serve with freshly grated Parmesan cheese.
