Cabbage and Fennel Citrus Salad

Ingredients
1/4 medium-size green cabbage, thinly sliced
1 large fennel, shaved or thinly sliced
1 large firm pear, peeled, halved and thinly sliced
1 orange, peeled, halved and thinly sliced
1/2 red onion, thinly sliced
1/2 cup apple cider vinegar
2 Tbsp. extra-virgin olive oil
1 Tbsp. Your preferred sweetener such as agave, maple syrup or honey
A handful of fresh mint leaves
Pure sea salt and GF ground black pepper to taste
Instructions
- In a large bowl toss everything together
- Cover and refrigerate for 1 hour
- Toss just before serving
