Gluten-Free Cinnamon Raisin Bagel

Ingredients
1 cup (148 g) gluten free measure for measure 1:1 flour blend
1/2 cup sulfite free raisins
2 Tbsp. gluten-free coconut sugar
1 tsp. GF ground cinnamon
1/2 tsp. Sea salt
1 cup plain full-fat thick Greek yogurt
Instructions
- Preheat oven to 400 F and line a baking pan with parchment paper
- In a small bowl mix first 6 ingredients
- Add yogurt and mix together forming a dough
- Wet your hands and roll dough into 4 balls. Place on prepared baking pan and using your finger poke a hole in the middle of each ball. Spread out the hole about 1-inch in diameter and prinkle with additional coconut sugar if you wish. If you like the bagels to be smooth wet your hands and smooth the top of the bagel
- Bake for 30 - 35 minutes until dark golden brown. Remove from the oven and transfer to a cooling rack to cool completely
- Note; if you have a donut pan even better, lightly spray the pan with cooking oil and reduce the cooking time to 20 - 25 minutes. The bagels are done when they reach internal temperature of 210 F
