Ingredients
12 medium-sized strawberries {preferrably organic}, hulled
2 Tbsp. Erythritol
1/2 cup good quality cream cheese ( 8 net carbs), softened
1 cup heavy cream (whipping cream)
Optional toppings; sliced strawberries, fresh mint, lemon zest, whipped cream, grated low carb dark chocolate,
Instructions
- Add the strawberries and the erythritol to a food processor and process until smooth
- Add cream cheese and blend until creamy
- Add cream and blend until you reach desired consistency, about 2 minutes.
- Divide the mousse into 6 glasses and refrigerate for 2 hours or overnight
- Top with desired toppings
