3 – Minute Paleo Chocolate Coconut Cups

You will love this paleo chocolate coconut dessert. It takes three minutes to cook and tastes better than chocolate pudding. I make this gluten-free dessert when I am pressed for time or have unexpected guests. This paleo chocolate coconut dessert is always a big hit, and kids love them too

Ingredients

  • 2 Tbsp. Coconut oil
  • 1 Tbsp. Pure cocoa powder
  • 1 Tbsp. Coconut sugar ( I use less since I don’t like it too sweet)
  • 1 large egg
  • 1 Tbsp. Coconut flour
  • 1/8 tsp. GF Baking powder (preferably aluminum free)
  • 1/4 cup coconut or almond milk
  • 1/8 tsp. Pure vanilla extract
  • 1 tsp. Unsweetened coconut flakes
  • 1 Tbsp. GF chocolate chips (preferably 80% cocoa)
  • Instructions

  • Using a small glass or microwave-safe bowl melt the coconut oil
  • Add all the ingredients in the same order as listed, except coconut flakes and chocolate chips. Whisk together
  • Pour into a microwave-safe cup and microwave at high for 2 minutes
  • Top with coconut flakes and chocolate chips and microwave 1 more minute
  • Note: if you are making more then one, microwave one at a time
