Tropical Quinoa Power Salad

Tropical quinoa power salad packs a lot of flavours. Quinoa is naturally gluten free seed, high in fiber, iron, potassium, contains all nine essential amino acids, B-vitamins and is also high in protein. Adding this wonder seed to a salad will fuel your body with energy and healthy nutrients. Why make only a green salad when you can have a delicious power meal such as this tropical quinoa salad

Instructions on how to deseed a pomegranate ->

Ingredients

2 cups cooked quinoa
1 large tomato, cut into bite size pieces
1 large orange, peel and cut into bite size pieces
1 pomegranate, deseed (if unavailable use grapes)
1 cup diced cucumber
1 cup dried currants or raisins
½ cup diced green onions
1 13 oz. can garbanzo beans, drain and rinse
¼ cup chopped parsley
Handful of fresh mint leaves
¼ cup fresh orange juice
2 Tbsp. raw apple cider vinegar
1 Tbsp. extra virgin olive oil
1 Tbsp. honey
Zest of 1 orange
Sea salt and freshly ground black pepper to taste

Instructions

In a large bowl combine quinoa, tomato, orange, pomegranate, cucumber, currants, onion, garbanzo beans, parsley and mint leaves
In a separate bowl whisk together orange juice, apple cider vinegar, olive oil, honey and orange zest. Pour over quinoa and mix well. Season with salt and pepper
Refrigerate for at least 2 hours or overnight, mixing half way through, allowing quinoa to absorb all the flavours
