Orange and Raspberry Quinoa Salad

This protein packed quinoa salad is infused with refreshing citrus and mint. Serve as a side with chicken or fish or enjoy this tasty salad as a snack


  • 2 cups cooked quinoa, cooled
  • 2 oranges, peeled and diced
  • 2 cups raspberries (preferably organic)
  • ¼ cup chopped pecans or cashews (optional)
  • ¼ cup chopped mint leaves
  • ½ cup freshly squeezed lemon juice
  • 2 Tbsp. agave nectar or honey
  • 1 Tbsp. extra virgin olive oil
  • ½ tsp. ground cinnamon
  • ¼ tsp. sea salt
  • 1/8 tsp. ground cloves
  • Zest of one lemon
  • Instructions

  • In a medium size bowl combine quinoa, oranges, raspberries, pecans and mint leaves
  • Whisk together vinaigrette ingredients and add to the bowl
  • Combine all the ingredients together, cover and chill for two hours, to allow the quinoa absorb all the delicious flavours
