Orange and Raspberry Quinoa Salad

This protein packed quinoa salad is infused with refreshing citrus and mint. Serve as a side with chicken or fish or enjoy this tasty salad as a snack


2 cups cooked quinoa, cooled
2 oranges, peeled and diced
2 cups raspberries (preferably organic)
¼ cup chopped pecans or cashews (optional)
¼ cup chopped mint leaves
½ cup freshly squeezed lemon juice
2 Tbsp. agave nectar or honey
1 Tbsp. extra virgin olive oil
½ tsp. ground cinnamon
¼ tsp. sea salt
1/8 tsp. ground cloves
Zest of one lemon


In a medium size bowl combine quinoa, oranges, raspberries, pecans and mint leaves
Whisk together vinaigrette ingredients and add to the bowl
Combine all the ingredients together, cover and chill for two hours, to allow the quinoa absorb all the delicious flavours
