Gluten Free Hot Quinoa Breakfast Casserole

Hot quinoa breakfast casserole is a simple and delicious alternative to traditional oatmeal. This easy to make gluten free breakfast dish is packed with protein, fiber and antioxidants. A healthy breakfast casserole baked in creamy coconut milk with apples, currants, and nuts with a hint of cinnamon is a wonderful way to start your day

Ingredients

½ cup pre washed quinoa
½ cup dried sulfite-free black currants
¼ cup of chopped nuts (walnuts, almonds, cashews)
1 apple, cored and cut to small pieces
1 ½ cup coconut milk
1 Tbsp. fresh lemon juice
1 tsp. grated lemon zest
1 tsp. pure vanilla extract
2 Tbsp. pure maple syrup
1/2 tsp. GF ground cinnamon
pinch of sea salt

Instructions

Preheat oven to 375 F
In a medium bowl combine all the ingredients. Add into a 4 cup casserole dish and cover with a lid or foil
Bake for 40 minutes. Remove from the oven, give it a stir and set aside for 10 minutes
Serve warm or cold. Drizzle with coconut milk or top with berries if you wish
