  • 1/4 cup extra-virgin olive oil
  • 3 Tbsp. GF tamari sauce
  • 2 Tbsp. Fresh lemon juice
  • 2 tsp. Liquid honey
  • 2 tsp. Sesame oil
  • 1 garlic clove, minced
  • 8 oz. baby spring mix
  • 3 green onions (spring) thinly sliced
  • 1 large beet, cooked, peeled and cubed
  • 1 red or yellow bell pepper, thinly sliced
  • 1 cup fresh blueberries
  • 1 cup peeled, deseeded and cubed cucumber
  • 1/4 cup halved cherry tomatoes

  • For the vinaigrette whisk everything together and set aside
  • To construct the salad, place the ingredients in layers and drizzle with tamari honey vinaigrette
