Gluten Free Sour Cream Pecan Coffee Cake

Ingredients
2/3 (152. g) cups unsalted butter, room temperature
1 1/4 (250 g) cups sugar
3 large eggs, room temperature
1 1/2 cups (354 ml) sour cream, room temperature
1 tsp pure vanilla extract
2 cups (296 g) measure for measure 1:1 gluten free flour blend
2 tsp baking powder
1/2 tsp baking soda
1 tsp sea salt
STREUSEL
1/4 (50 g) cup sugar
1 tbsp pure maple syrup
1 tsp GF ground cinnamon
1/2 cup (74 g) gluten free flour blend
3 tbsp cold unsalted butter, cubed
1 cup chopped toasted pecans or nuts of choice
MAPLE GLAZE
1/2 cup powdered sugar
2 tbsp pure maple syrup
Instructions
- Preheat oven to 350 F and generously butter a 10-inch bundt pan
- Cream butter with sugar using an electric mixer until light
- Add eggs, one at a time, beating well after each addition, then add vanilla and sour cream and mix until smooth
- In a separate bowl, whisk flour, baking powder, baking soda, and salt
- Gradually add flour mixture to the batter, and using a spatula, mix until just combined
- STREUSEL
- In a medium bowl, mix sugar, maple syrup, and cinnamon until combined. Add flour and butter cubes and create a crumble using your fingers. Mix in the pecans
- ASSEMBLE
- Spoon half the batter evenly into the pan and sprinkle with 1/2 the streusel. Spoon the remaining batter evenly over the top and finish with the remaining streusel
- Bake for 50 - 55 minutes, until a toothpick inserted in the cake comes out clean
- Cool in the pan for 60 minutes, then gently transfer onto a cake platter with streusel side up
- Mix glaze ingredients and drizzle over the cake. If the glaze is too thick, add a few drops of water until you reach the desired consistency

I just made this pecan coffee cake for my Daughter and Son-in-laws Anniversary this past Sunday! There was not a crumb left :) ! Now my Grandson requested it for his Birthday tomorrow! Great recipe and glad to have another gluten free cake recipe!
