Easiest French Apple Cake – Gluten Free

Ingredients
3 baking apples, peeled, cored and roughly chopped (preferably organic)
1/2 cup + 2 Tbsp. (100 g) Coconut sugar or sugar of choice, divided. (If you use white sugar the cake will have a light golden colour)
1/2 Tsp. GF ground cinnamon (optional)
1 1/3 cups (197 g) gluten-free all-purpose flour blend
1/2 cup (56 g) almond flour
1/2 tsp. Baking soda
1/2 tsp. Sea salt
1/2 cup full fat plain Greek yogurt or sour cream
1/3 cup extra virgin olive oil
3 large eggs
1 tsp. pure vanilla extract or 2 Tbsp. rum
Instructions
- Preheat oven to 350 F. Grease a 9-inch springform or regular cake pan with butter or nonstick cooking spray. And line the bottom of the pan with a circle of parchment paperÂ
- In a medium bowl, toss apple chunks with 2 tablespoons of sugar and cinnamon
- Using a large bowl, whisk flours, remaining sugar, baking soda and salt. Add yogurt, olive oil, eggs and vanilla and whisk to combine. Fold in the cinnamon apple slices and transfer batter to the cake pan
- Bake for 35 - 40 minutes until the cake passes the toothpick test. Cool in the pan
- Invert the cake onto a rack, remove the parchment paper, then carefully flip the cake over onto a plate. If you wish, sprinkle the cake with powdered sugar or granulated sugar.
