Coleslaw In Light Coconut Dressing With Mint

This coleslaw salad has a light and creamy dressing mildly flavoured with mint. Serve as a starter or as a side with your meal. The refreshing cabbage salad is packed with vitamin C and is high in fiber. Including cabbage in your diet will promote healthy weight

 

Ingredients

  • 4 cups thinly sliced green cabbage
  • 1 small white onion, thinly sliced
  • 1 cucumber, thinly sliced with or without skin
  • 1 large carrot, shredded
  • 1 green apple, cored and thinly sliced, with or without skin
  • ¼ cup fresh mint leaves, thinly sliced
  • Sea salt and GF freshly ground black pepper to taste
  • For the dressing • ¼ cup apple cider vinegar • ¼ cup coconut milk • 2 garlic cloves, minced • 2 tsp. agave nectar • ¼ cup extra virgin olive oil •
  • Instructions

  • Combine cabbage, onion, cucumber, carrot, apple and mint leaves in a large bowl
  • In a high-speed blender blend the dressing ingredients until creamy
  • Pour dressing over salad, toss and serve
